I love lentils, they are just so good! You can use them for so many different things too! But today I’m going to share my recipe for lentil and carrot patties. You can also make them smaller and round so they’ll be balls instead 😉 serve them as a burger, with potatoes, rice, a salad and any sauce you like. These ones are vegan, gluten-free and easy to make!
This recipe is for four people:
🥕 2 dL of lentils (I use red)
🥕 4-5 carrots
🥕 1 tablespoon of vegetable stock
🥕 1 white onion
🥕 2-3 garlic cloves
🥕 about 1dl oat flour (or any other you prefer)
🥕 vegetable oil to fry in
🥕 2 teaspoons of curry powder
🥕 1 teaspoon of cayenne pepper
🥕 salt, black pepper and white pepper
Start with peeling (if you need it) the carrots and chopping them in small pieces. Put the carrots, the lentils and vegetable stock in a pot and almost cover them with water. Let it simmer for about 10 minutes and remember to stir occasionally. Meanwhile chop the onion and the garlic in very fine pieces.
After the 10ish minutes of simmering take the carrots and lentils and put in a food processor or use an immersion blender to make almost like a purée. Then mix in the onion and garlic and spices. Taste the batter to see if you need more of any spice. Then add a bit of the flour and stir. If it’s to loose add more flour otherwise just heat up the pan and start frying! You can also bake them in the oven but I prefer them pan fried. If your insecure about if you need more flor just take a little bit and fry it and see if it sticks together otherwise add some more flour 🙂
